Strawberry Rhubarb Crisp

A friend of ours at church gave us some rhubarb this week, so I made strawberry rhubarb crisp for the first time.  It turned out really well.  So well, in fact that it’s already gone before I could take a picture of it… 😉  We’re going over to a friends house tomorrow though, and since there was enough rhubarb for another batch that’s what I’m planning on bringing.  I really wanted to make a pie as well, so we’ll see how much I have left over.  She gave me two good sized bundles.

I’m considering planting some things on the side of the garage and I think rhubarb would be one of them.  I’m not sure what else at this point, but I like having rhubarb, and it seems like a hardy plant.

As we were getting ready for school this morning, the kids asked if they could have some blackberries.  I had bought a small container this week since they were on sale and I love them, and there were a few left.  I actually expected Chloe to be turned off by the texture and look of the berries, but nope!  She loved them–and so did Josiah.  (But what’s not to love, right?  Yum!)  Anyway, that led to a conversation about where blackberries come from, and how she thinks they should really be called purple berries, and how they should always be washed before eating them in case some wild animal had come along and licked them.  Haha!  I don’t know where she comes up with some of this stuff!  I then shared the memory that I had as a kid going out in to our woods to pick blackberries and raspberries and how delicious they were.  She was shocked that I would eat them right off the bush.

“What if a deer had licked them?  Weren’t you afraid you would get sick?”

🙂

Nope, that thought never occurred to me.

Food Attitude.

My kids have a food attitude.  It’s true.

However, I wasn’t aware of it until they went to stay with my folks for a few days.  They are picky eaters.  Which is so funny to me, because I’ve never really considered them to be picky.  But then we started thinking about the food that we eat–and we mostly eat the same things over and over.   Mainly out of convenience and cost, not really for any particular reason.  So while they eat many different foods, they only eat the SAME foods–for example PB&J sandwiches–but always creamy PB and grape jelly.

So, I’ve started “operation food exposure 2015.”

And this week at the store we picked up variations on our old favorites:

That’s right–we went for EXTRA crunchy PB and the seediest jelly I could spot.  I know it’s going to be hit or miss on many of these item with the kids, but I need them to at least try them for a few days to be exposed to different things.  And who knows?  Maybe they’ll discover their new favorite thing?

When I came home with the Raspberry preserves Tim shook his head and said, “good luck with that” but I’m pleased to say that it wasn’t a total flop.  In fact Josiah loved it immediately and Chloe is coming around after days of trying it she didn’t even flinch at the seeds this morning.  😉

Done! Another contest completed…

The weekend went quite well–we definitely had gorgeous weather for contest.  Some of the volunteers even ate lunch out on the patio during the weekend.  I didn’t really get to enjoy any of it since I was inside, but there were windows, so I could SEE how nice it was!  🙂

My brain is still sort of mush yet, but it was delightful to be able to have a low key morning cleaning and then grocery shopping with Josiah and Tim.

Unfortunately, late last week and into the weekend Chloe wasn’t doing well, so Tim took her to the Minute Clinic and it turns out she had Strep.  She went on medicine right away and after a couple of days perked right back up.  In fact, she’s back at school today.

They made leprechaun traps for school–Tim & Chloe worked on it on Monday when she was feeling better.  It’s adorable…

I love my lists.  They make me feel organized and productive.  I love the feeling of “checking” off my items and moving to the next.  In fact when we leave for places we go through verbal checklists in the car where I ask if they have certain items and they yell “check” if they do.  🙂  Coat?  Check!  Mittens?  Check!  Both kids?  Check!

Well, I guess all my list writing has rubbed off on Chloe.  And now that she’s starting to read more she’s branching out and writing more stuff on her own too.   Of course, the hard part is that she doesn’t know how to spell much and keeps leaving out vowels in her words… It usually takes me a minute to process what she meant.  Anyway, the other night Jen came over to watch the kids for us so we could go on a date.  Chloe made a list of stuff for them to do while she was there.  It was so funny and cute:  (it’s meant to be completed bottom to top)

Chloe’s Swimming Lessons

We have (finally) enrolled Chloe in swimming lessons through community education.  She gets to go to class on Saturday mornings for about 45 min.  I was a bit worried about it at first because she HATES getting water in her face, but she is doing wonderfully.  She was so excited to go back this week it was adorable.  And to top it off, one of her friends from church happens to be in the exact same class as her!  There are only 4 kids in her class (and a few other classes are going on at the same time) so having a friend has been really fun for her.  She is getting more and more brave each week and loves “showing off” for me about how she can dunk her head underwater.  And let me tell you—that’s REALLY an accomplishment!    It’s an 8 week session so it’s breaking up the humdrum midwinter nicely.
