Food Friday: Superbowl food!

Some of the goodies this year included:

  • Mini corndogs
  • Empanadas (homemade!)
  • Chicken nuggets
  • Mini tacos
  • BBQ meatballs
  • Lil’ smokies
  • Smoked Ribs
  • Fruit (grapes, bananas and apples)
  • M&M cookies
  • Special K bars
  • Brownies
  • Veggies (peppers, carrots and cucumbers)
  • Doritos
  • Caramel Popcorn
  • Gaucamole
  • Whoopie pie (that says 2020 Superbowl)
  • Buffalo dip
  • Cheesy bacon dip
  • Homemade fruit dip
  • Bacon cheddar ranch pinwheels
  • Raspberry fluff
  • and a BOATLOAD of green jello for the field.

It took 26 boxes of Jello to make the green jigglers, but it worked so well!  We are definitely doing that again next year.  And guess what my kids have been eating all week?  Green Jello!  Yup. We’re having it supper and I even pack it in their lunches for school.  Haha!

We also smoked the ribs–but discovered the smoker was acting up, so we had to put them in the oven for the last hour.  I’m not sure what’s up with that…

But for today’s recipe I’m going to post the fruit dip that I made.  It was crazy easy and quite delicious.

It’s only 4 ingredients!  Here is the link to the recipe I used.  But I’m also going to post it below in case you don’t want to click the link.  😉  The only extra thing I would add is you should blend the cream cheese with a blender for a little bit and then add the yogurt to that slowly so you don’t get lumps.  Mine had tiny lumps in it and it bothered me.

Really Good Easy Fruit Dip

INGREDIENTS

  • 1 (7 ounce) jar marshmallow fluff
  • 1 (8 ounce) package cream cheese – softened
  • 1 cup vanilla yogurt
  • Splash of maraschino cherry juice

INSTRUCTIONS

  • Place all of the ingredients in a bowl and blend with a hand mixer until smooth. Serve with fresh fruit.

    That dip looks so tasty, but doesn’t it negate the benefits of eating fruit if you then dip it in something with a lot of calories??
    (I know…. it is for special occasions.)
