Fried rice has always seemed like a daunting thing to make. So, whenever we would have an Asian inspired main dish we would eat it over noodles or mashed potatoes or occasionally plain rice but that was pretty boring. Then after we had one of our babies (ha! I can’t remember which one. It must have been Maddie or Levi because we were living in this house) one of our friends brought us a meal which included homemade fried rice! Tim and I agreed that it was scrumptious and I asked her to teach me how to make it.
I’m going to post the recipe below (in a “read more” tab since I feel so special that I know how to do that now). 😉
And because every post is better with a picture… here is my attempt at a picture of my fried rice and Teriyaki chicken. Apparently rice and chicken don’t photograph well… it looks a bit sad and washed out. But let me tell you–it’s delicious!
Fried Rice Recipe: (compliments of Lisa Tindall)
- Make 2 servings of Rice in rice maker (this is the equivalent of 1.5 cups of dry rice)
- 1 bag of frozen mixed vegetables (but after you cook them in the microwave take out all the green beans. I normally just set them aside and the kids snack on them) Although I should add that when Lisa gave me the recipe she did not tell me to use frozen vegetables. I use them because I am lazy. Normally you can sautee any vegetables that you have on hand.
- 4 eggs scrambled
- 1/2 – 1 cup of diced onion sauteed (in olive oil) together with…
- 1 clove of garlic
Mix together: cooked rice, cooked vegetables, scrambled eggs, sauteed onions and garlic in large pan and add soy sauce to taste (usually about 4 Tbl). Done!
I think that’s the same recipe I use! It’s yummy!
