Homemade Ravioli

That’s right–you read that correctly.  We made homemade ravioli tonight.  I’ve always thought making homemade pasta sounded so fancy (and impossibly difficult) but I’m pleased to say that it was not nearly as bad as I envisioned it.  Don’t get me wrong, it was definitely time consuming (hence doing it on my spring break) but not terribly hard.

We had planned to make it without a ravioli tool, but after more thought, we decided to just go ahead and purchase the tool–and let me tell you it was SO nice.

Here’s the quick picture summary of the process:

First make dough from scratch.  And yes, I did knead it for the suggested 10 min. if you were curious... :)

Next:  Put one layer of dough over form.  Put indentation form on top of the dough to create little pockets.  Fill pockets with cheese mixture (Tim made that earlier)

Now top with another layer of dough.

Then firmly press a rolling pin across the top of the form.

And rolling... it was really fun and easy!

Then flip the form over and gently help the ravioli drop free of the form.

Finally boil for 6-7 minutes and enjoy!

I must say I’m pretty pleased with how well it turned out.  We served it will spaghetti sauce and cheese sprinkled on top.  We all agreed it was good–Josiah even asked for seconds.  I feel so accomplished now that I can say “I made homemade ravioli!”

    I’m impressed! It took me a while to figure it out, but I finally got it. But I am wondering how you cook them. Do you just boil them in water, like noodles? And what is in the cheese filling?

    I know Tim helped, but did the kiddos have a chance to get their fingers dirty? Good for you make yours from scratch. BUT where’s the bacon?

    Yup, we just boiled them in plain water for 6-7 min. The filling was ricotta cheese, eggs, cheddar cheese and a shredded 3 cheese blend. Not particularly healthy, but very yummy. Although we did talk about making a different filling now that we know how to make them… we could literally fill it with whatever we want now!

    Oh, and the kids didn’t help–Chloe wasn’t feeling well, and it was beyond Josiah’s grasp yet. Plus for our first time making it Tim and I were more excited to see how it went. Alisa was over, though and we taught her how to do it too–so someone else got to learn too! 🙂
