Update on Food, Food, Food!

I realized (thanks to Krista’s inquisitive comment 🙂 ) that I completely forgot to write how the recipes turned out!   So, here goes:

Sweet ‘n Spicy Ribs turned out excellent!  I would definitely make them again.  They were flavorful and tasty albeit just a smidgen on the dry side.   Of course, I’m not a rib connosour so I don’t have much to compare them to.  🙂  (Tim says they were good too. He said he would give them a 6 out of 10 (for the dryness) but if done again and more moist he would give them a 8 out of 10).  Here’s the recipe for those interested:

Sweet 'n Spicy Ribs

Sweet ‘n Spicy Ribs

~ 5 cups barbecue sauce

~ 3/4 cups packed dark brown sugar (but I only had light)

~ 1/4 cup honey

~ 2 Tbl. Cajun seasoning

~ 1 Tbl. garlic powder

~ 1 Tbl. onion powder

~ 6 pounds pork or beef back ribs, cut into 3-rib portions

Directions: Combine all ingredients (except ribs) to make sauce in medium bowl.  Remove 1 cup mixture; refrigerate and reserve for dipping sauce.  Place ribs in large crock-pot and pour BBQ sauce mixture over ribs.  Cover; cook on LOW 8 hours or until meat is very tender.  Transfer ribs to serving platter; cover with foil to keep warm.  Skim fat from sauce and discard.  Serve with additional reserved sauce.

The potato soup I made again tonight and it was scrumptious!  It was warm and thick–just the thing for a cool fall evening.  I’ve italicized the added ingredients that we altered from the original recipe.  Here is the recipe:

"Jane's Potato Soup"

Jane’s Potato Soup (yup that’s the real name)

~ 1 (30 oz) bag frozen hash-brown potatoes (square kind)

~ 2 (14 oz) cans chicken broth

~ 1 (10.75 oz) can cream of chicken soup

~ 1/2 cup chopped onion

~ 1/3 tsp. black pepper

~ 1 (8 oz) package cream cheese (softened)

~ 1 cup diced ham

~ Garnish with cheddar cheese and minced green onion

Directions: In slow cooker, combine broth and soup and whisk gently.  Add onion, pepper, and potatoes; mix.  Cover and cook on low for 5 hours.  Sir in cream cheese and cook for 30 minutes, stirring occasionally until combined.

    My kids like potato soup. I’ll have to try this recipe. Sounds good.

    Sounds scrumpcious! High in calories, but yum, yum, yum!
