Slow Cooker Sesame Chicken!

This post is for Kristen (or anyone else who wants another recipe to try!).  I was telling her about this recipe we tried this week and really liked.  It was crazy easy and super delicious!  I’ve linked the actual recipe below, but here it is written out… (with my comments)

Slow cooker Sesame Chicken

 

Ingredients:

1 1/2 lb boneless/skinless chicken breasts  (we used 2.5 pounds and agreed that we could even do more–the sauce goes a long way)
1/2 c honey
1/4 c soy sauce
2 Tbsp dried onion
2 Tbsp ketchup
1 Tbsp oil
1/2 tsp garlic powder
2 tsp cornstarch dissolved in 3 tablespoons water
sesame seeds

Directions:

1. Put chicken into crock pot.
2. Combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour over chicken.
3. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce.
4. Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
5. Cut chicken into bite size pieces and return to crock pot – can leave chicken in and simmer on low or serve. Sprinkle with sesame seeds and serve over rice.
(Tim said he skimmed out some of the fat before step 4 since it was easy to take out at that time, and who needs to eat extra fat?  😉  )
Oh, and we ate it over steamfresh rice with vegetables mixed in… like this.. and it was great!

    It turned out pretty well. Kieren and Abby really liked it. I couldn’t get it to thicken up, though, so it was really runny. But it’s definitely a keeper!

    Kristen, I had the same problem with it thickening up so I added 2 more Tbs of corn starch and that seemed to thicken it up nicely.
